1. In a large skillet over medium heat, heat the EVOO. Add the zoodles and cook, stirring occasionally, for 3-4 minutes until the zoodles are tender. Drain off any excess liquid.
2. Add the pesto, tomatoes, basil, and mozzarella (if using) and toss to mix. Season with salt and pepper to taste. Cook until the cheese is melted (about for 2-3 minutes longer). Serve immediately.
Original recipe calls for small mozzarella balls, halved. They didn't melt well, and were a stringy mess, failing to incorporate and making serving difficult. If using, would switch to pre-shredded mozzarella (pizza-type).
