Delicious casserole!

Preheat oven to 400. Sprinkle salt on zucchini and let sit for 10 minutes. Wring extra water from the zucchini. Combine zucchini noodles with eggs, parmesan, and half of cheese. Press mixture into the bottom of a lightly greased pan. Bake uncovered for 20 minutes. Cook beef and onion. Drain any liquid then stir in tomatoes. Layer on top of the zucchini mixture. Sprinkle remaining cheese over the beef. Top with green pepper. Bake an additional 20 minutes until heated through.
Makes 4 servings.
