"Zucchini" is the same as "Courgette" and is used in this recipe to create a light slice perfect for lunch or a light dinner
Preheat oven to 170°C. Grease and line a 30 x 20cm lamington pan. Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese, corn and oil and stir to combine. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through and golden on top. TO FREEZE Slice into individual serves and then wrap portions in aluminium foil. You can either eat once thawed or, for a special treat, warm in a medium heat frypan.
Add some grated Parmesan cheese to the top before baking for a salty, cheesy crunch
