This is a super quick & simple appetizer, side dish or even a meal all by it's self! Great to help use up all the zucchini from the garden.
1) Preheat oven to 350 degrees. Grease bottom & sides of a 13x9x2 pan.
2) Stir all ingredients, except mozzarella, together to form a batter and spread in the pan.
3) Bake about 25 minutes or until lightly browned. Remove and top with mozzarella shreds and return to oven for a few minutes longer to melt and brown.
4) Remove from oven and let cool 5 minutes. Cut into 12 squares.
