Suggest a better descriptionPlace 1/3 cup water in skillet and add mushrooms and onions. Saute until they begin to break down. Add zucchini and sauté until slightly soft, but still firm. Add corn and ½ the sauce simmer until it cooks down some. Serve on corn or flour tortillas or on a bed of lettuce.
Chipotle Sour Creme:
Put all ingredients in high-powered blender and process until smooth and creamy. Add water as necessary, to achieve desired consistency.
~ I like to fill a squirt top bottle with chipotle sour crème and drizzle it over salads, taco wraps, and many other raw foods.
