Tasty Tater Tots with lots of veggie.
Squeeze all water out of potato and zucchini. I wrap food in a rag and squeeze.
Mix all ingredients together. Hands work the best.
Place scoops into greased mini muffin pan.
Bake at 400 for 10-15 min
Eat warm or cold. They freeze and reheat well.
I no longer use mini muffin pans. Too hard to clean.
I like to use a glass pan and then cut them into bite size
