Cook the bacon in a large stockpot. Remove and drain all but 2 Tbls fat.
Cook onions in bacon drippings until soft, about 5 minutes.
Add sausage and brown.
Add garlic and red pepper flakes. Cook 2-3 minutes.
Add chicken broth, water, and potatoes. Bring to a boil, turn down to a simmer. Continue to cook until the potatoes are done.
Add kale and cream (or half n half). Return bacon to the pot. Heat through and serve.
