"Love these potato tacos! I make the cilantro sauce that there's a link to in the recipe (but slightly modified as I don't add the olive oil or apple cider vinegar). I did have to modify the cooking of the potatoes though since they really don't get very crispy cooking them on the stove top like directed. I have found if you use the 'good eats' method of baking them in the oven, you get perfectly crispy potatoes. So I preheat oven to 450* and in the salted water for the potatoes, I add an 1/8the tsp baking soda. After boiling/draining the potatoes, I put them back in the empty pot and cook off excess moisture, add the olive oil, taco seasonings and diced red bell pepper and mix potatoes vigorously to make them have a little paste built up. Then spread the potatoes on a baking sheet w/ sprayed parchment paper into a single layer. Bake 15 min, then flip them over and back another 10-15 min. They turn out perfectly crispy!! Only other thing I do is don't use is the black beans. These are so yummy! Have made multiple times now."
