3 lbs Green cabbage outer leaves removed
1/2 small Red onion cut in half through the stem and thinly sliced
1 cup Cilantro coarsely chopped
1 large Jalapeno peppers seeded and finely chopped
1/3 cup olive oil
4 tbs Lime juice fresh
4 tbs Red wine vinegar
pinch Sea salt maldon or other sea salt (see note)
pinch Pepper to taste
pinch Sugar to taste

ChefderangMaldon sea salt from England, rated highly by many chefs, has bright taste and flaky, soft crystals. The texture goes when it melts, of course. Kosher salt will also work. [I posted this recipe.]
