Almond Croissant Bread Pudding with Maple Bourbon Sauce

Leftover Almond Croissants = Delicious Bread Pudding with Bourbon Sauce. Ok I’m not going to lie this is absolutely decadent. Now one of my favorite recipes adopted to my specific tastes. It does open the door for other kinds of pastry that could be turned into bread pudding? For a lemon dish, I would probably swap out the Bourbon with Limoncello….You get it, time to create. Enjoy!!

Ingredients

3 cups Almond Croissants Cubed

2 cups Milk

2 Eggs

1 cup Sugar

1 tablespoon Vanilla extract

1/2 teaspoon Cinnamon

1/4 teaspoon Nutmeg

4 tablespoon Butter Melted

1 1/2 cups Bourbon Sauce

2 Egg yolks

1 stick Butter

1 cup Sugar

1/4 cup Maple Syrup

1/4 cup Bourbon Whiskey Woodford To Taste

1/2 cup Vanilla Ice Cream If desired


Directions

Preheat Oven 350 degrees Butter Casserole dish Add cubed Croissants In separate bowl - Beat eggs & sugar until thick Add vanilla, cinnamon, nutmeg, butter Add Milk Pour over cubed Croissants in buttered casserole dish. Let stand 10min Bake 40-50min until custard sets and is firm Bourbon Sauce In a bowl beat the egg yolks until thick and pale. In a small saucepan, melt butter, sugar, maple syrup on medium. Temper the egg mixture by adding a little amount of the butter/sugar mix to the eggs then add the eggs to the small saucepan. Turn small saucepan to med/low. Add Bourbon, slowly continue to stir until blended on low heat. Serve Pudding warm with sauce, and Vanilla Ice cream or whipped cream if desired.
