Preheat oven to Gas Mark 4/350F/180C. Chop pistachio nuts. Peel and finely chop onion. Quarter, core and finely chop apple. Mix together chopped onion, apple, pistachios, parsley, salt and pepper. Season guinea fowl with salt and pepper. Fill guinea fowl cavity with apple mixture. Place on roasting tray. Dot guinea fowl with butter. Roast for 1 1/4-1 1/2 hours until cooked through, basting often. Serve. NOTES : Serve this delicious roast bird with mashed potatoes, green beans and glazed onions. Recipe by: Teletext (Ch4)
