Preheat oven to 190oC
Spray 36 30ml (1 1/2 tbspns) capacity muffin pans with oil to lightly grease
Place wonton wrapper in each pan and press to line base and side
Bake for 8 minutes or until golden brown and crisp
Set aside in the pans to cool completely
Place the avocado in a bowl, add the sour cream and combine
Add the Tabasco sauce to taste
Combine the tomato,onion,coriander and lemon juice in a bowl
Season with salt & pepper
Spoon the avocado ix evenly aming the wonton wrappers
Arrange on a serving platter
Top with the tomato mix and serve immediately
NOTES
Make it ahead:
Store avocado mix in the fridge in an airtight container cover the surface of the avocado mix with plastic wrap to prevent browning
or in a ziplock bag with all the air removed.
