Avocado and cherry tomato salsa wonton cases

Ingredients

1 tbspn Extra virgin olive oil or oliv oil spray

36 Wonton wrappers

2 avocados peeled and mashed

1/3 cup Light sour cream

10 Drops Tabasco sauce

1 Punnet Cherry tomatoes coarsley chopped

1/2 small Red onion finely chopped

1/3 cup Fresh Coriander finely chopped

2 tbspns Lemon Juice


Directions

Preheat oven to 190oC Spray 36 30ml (1 1/2 tbspns) capacity muffin pans with oil to lightly grease Place wonton wrapper in each pan and press to line base and side Bake for 8 minutes or until golden brown and crisp Set aside in the pans to cool completely Place the avocado in a bowl, add the sour cream and combine Add the Tabasco sauce to taste Combine the tomato,onion,coriander and lemon juice in a bowl Season with salt & pepper Spoon the avocado ix evenly aming the wonton wrappers Arrange on a serving platter Top with the tomato mix and serve immediately NOTES Make it ahead: Store avocado mix in the fridge in an airtight container cover the surface of the avocado mix with plastic wrap to prevent browning or in a ziplock bag with all the air removed.

These were a hit, but had to make last minute as the tomato would make the cases soggy
