Avocado Cucumber Soup

Ingredients

1 large avocado peeled, pitted and halved

2 whole cucumbers peeled, halved, seeded and chopped

1 cup fat free low sodium vegetable broth

1 cup evaporated skim milk

2 tbso lemon juice

1/4 cup green onion chopped, for garnish

1/2 cup tomato chopped for garnish


Directions

In food processor or blender, blend first 5 ingredients until smooth. Season to tast with salt and pepper. Cover and chill. If soup is too thick, stir in more broth or milk. Garnish with green onions and tomato before serving.
