Avocado, shrimp,hearts of palm

Ingredients

1/2 cup Olive oil

1/4 cup Water

3 tablespoon white vinegar

4 teaspoon Dijon mustard

1/2 cup white onion chopped

1/3 cup Red pepper

1/3 cup Green pepper

1/3 cup Yellow pepper

1/3 cup Fresh parsley

2 hard boiled eggs

3 avocados halves, slices

8 ounces cooked shrimp

1 can hearts of palm cut in rounds


Directions

Whisk first 4 ingredients in bowl. Add onion, peppers, parsley, eggs. Stir. Season dressing with salt and pepper. Arrange 1 slice avocado slightly fanned on plate, top with shrimp. Arrange heart of palm on top and drizzle with dressing.
