Aztec Chicken

Savory slow-cooked chicken with chorizo. Scrumptous over rice. Just the right amount of snap, and easy to make.

Ingredients

2 lbs. Chicken Breasts cut into 1" pieces

1 lb. Chorizo 1/4" slices

1 20 oz. can Crushed Tomatoes

1 20 oz. can Diced Tomatoes drained

1 8 oz. can Green Chili pieces drained

1/4 cup Jalapeno slices drained

1 tsp Oregano

1 tsp Cumin

1 tsp Chili Powder

1 pkg. Dry Onion Soup Mix

Black Pepper to taste

1/2 cup Celery finely chopped

1/2 cup Red Bell Pepper chopped

1 12 oz. can Mushroom pieces

White Rice


Directions

Place Crushed tomatoes, jalapenos and green chilis in a blender and puree until you have a consistent color. Slice chicken and chorizo. Place in slow cooker and cover with blended sauce. Combine Diced Tomatoes, Oregano, Cumin, Chili Powder and Black pepper. Add package of dry Onion Soup and mushroom pieces. Add diced Celery and chopped Red Bell pepper. Cook on Medium for 5 hours, stirring occasionally. If desired, you can thicken with corn starch or Wondra flour. Serve over White Rice.
