Bacon Horseradish Potatoes

Ingredients

Yukon Gold potatoes (same weight as 2-3 russet pot

Kosher salt

Drizzle EVOO

2 slices smoky bacon finely chopped

1/3 cup sour cream

1 rounded Tbsp prepared horseradish

Black pepper


Directions

Peel potatoes & cut into chunks. Cover potatoes with water & bring to boil. Salt water and boil 12-15 minutes until tender. Drain & return to hot pot. While potatoes cook, heat small skillet with drizzle of EVOO over medium-high heat. Brown bacon then drain & reserve. Whip potatoes with bacon, sour cream, horseradish & pepper.
