Pasta salad with ranch and bacon.

1 pound Pasta (macaroni, rotini, shells, etc.)
1 large Tomato diced
1 pound Bacon
1 16-oz can Black olives drained and sliced
1 pound Mozzerella cheese cubed
1 Cucumber peeled and cubed
1 bottle Ranch Dressing
I had to bring 2 salads to a get together and this was the other one. Its really good tasting and people liked it a lot. I would probably make it again for those occasions because its easy to make and double a few times. Only thing, I had to keep adding dressing because it dried up quick so bring an extra bottle or just add more at the making of it.
AimeeladyIf used as leftovers the bacon gets kinda rubbery. I would recommend using the bacon as a topper and adding just before use. Also, the cheap mozzarella isn't such a great texture in this. I would certainly recommend the freshest stuff you can get. The mix of flavors was yummy, loved the crunch of the cucumber. Like the idea of adding bacon grease, may try that next time.
jlburgartMade this recipe tonight. I agree with using more dressing because the noodles soak it up. I might also add Italian dressing so it's not so bland. Love the bacon for crunch. Thanks for submitting.
