Directions

Pre-heat the oven to 350 degrees. Place the chicken in a roasting dish. Cover with tomato sauce and mozzarella. Place in pre-heated oven for 30-40 minutes until the chicken is cooked through. In the meantime, cook the quinoa pasta and saute the chopped vegetables. Serve the chicken on top of the pasta, and add sauteed vegetables on the side.
