Baked Penne Florentine

Ingredients

1 pound penne boiled for 5 minutes and drained

1 (10oz) package frozen spinach defrosted and drained well

1 (12oz) package soft silken tofu (1 1/2 cups)

1 cup water

1/4 cup nutritional yeast flakes

2 tablespoons margarine

1 tablespoon light miso

1 tablespoon white wine

1 tablespoon freshly squeezed lemon juice

1/2 small onion coarsely chopped

1 teaspoon mustard powder

1/4 teaspoon paprika

1/4 teaspoon salt

1/4 teaspoon dried basil

pinch ground nutmeg

1 cup bread crumbs


Directions

Preheat oven to 350F. Mist a deep casserole dish with nonstick cooking oil spray and set aside. Combine the partially cooked penne and spinach in a large mixing bowl and stir well. Put the remaining ingredients except the bread crumbs in a blender and process until smooth. Pour over the pasta and stir well. Transfer the mixture to the prepared casserole dish and sprinkle the bread crumbs over the top. Bake for 35 minutes or until bubbly. Remove from the oven and let rest for 10 minutes before serving.
