Preheat oven to 425 degrees. Choose small sweet potatoes or cut large sweet potatoes in half length wise. Scrub potatoes and use a vegetable peeler to remove skin. Use a food processor to slice potatoes into fairly uniform chip size. In a large mixing bowl combine olive oil, a pinch of sea salt and a pinch of cinnamon. Dump the sweet potato chips into the bowl and stir lightly until fully covered with the olive oil mixture. Transfer to a lightly greased baking sheet. Place the chips flat on the baking sheet. I'm not sure how long I baked these for. Maybe 20 minutes. Definitely check regularly to ensure they don't burn. Enjoy :)
