Banana Bread Pudding

Ingredients

4 cups Day old bread (to 5 cups)

4 Eggs

3/4 cup Brown sugar (tightly packed)

4 cups Buttermilk

2 1/2 tablespoons Vanilla

1/2 teaspoon Nutmeg

1 teaspoon Cinnamon

2 Bananas mashed


Directions

Preheat oven to 350. Butter a low baking dish or individual ramekins. The day old bread can be your choice (French, day old biscuits, corn bread or a combination of some or all of the above). Cut the bread into 1 inch cubes and set aside. In a mixing bowl combine the remaining ingredients mixing well, making sure the brown sugar isnt lumping up. Add the bread to the mixture, let soak 5 minutes. Pour the mixture into prepared baking dish and bake at 350 degrees for 45 minutes. Can be served with a Rum Sauce, whipped cream, or fresh fruit. This recipe yields 6 servings.

I followed the recipe exactly, but there was something about the bananas that seemed off. I probably will not try again.

I consider myself an advanced cook and I followed the directions to the letter and it curdled. I don't know what I could have done differently. I usually make a traditional New Orleans bread pudding with whiskey sauce that always comes out great so I will stick to that one.

Easy to make, I added some old cinnamon raisin bagels. Buttermilk makes a creamier "pudding" than milk.

very good! not too sweet. didn't have enough buttermilk on hand, used regular milk and was not disappointed by the results. would make again!
