This is THE best banana bread I've ever had! However, I have to say that perhaps that is not so much due entirely to this recipe as it is written, or the additions that I made to it. I added 1/2 cup sour cream, 1/2 cup shredded coconut, 1/4 cup chopped walnuts, and topped the loaf with a wonderful caramel buttercream frosting that I had left over from a cake I made (Ree @ Pioneer Woman's Caramel Buttercream recipe). I have to say, the lemon juice in this recipe (I used 5 drops of lemon essential oil, since I had no lemons) gives this bread a really unique, fresher flavor than most banana breads. I think I will just chuck all my other banana bread recipes, in favor of this one - my new favorite.
