Barbary Duck Breasts

Ingredients

2 Duck breasts

1/2 teaspoon Salt

1 teaspoon Peppercorns coarsely ground

30 g Butter

1 teaspoon olive oil


Directions

Preheat the oven to 200C/400F/gas 6. Peel the skin off the breasts, sprinkle with the salt and peppercorns and pat down well. Heat the oil and butter in a grill pan until very hot then put in the duck breasts, skin side down. Cook for 5 minutes if you like your duck rare or 8-10 minutes if you prefer them well done. (The cooking time will vary depending on the size of the duck breasts.) Serve the duck breasts hot, sliced diagonally.

Tasted really good. I plated it up with whole grain mustard mash, asparagus and a orange, ginger and cranberry coulis. Very nice!!!

I'm confused, why heat the oven if you are going to pan fry them?
