Barbecue Pork Shoulder

Ingredients

6 lb. pork shoulder

2 tsp. garlic salt

2 tsp. garlic pepper

1/2 c. hickory chips

Basting Sauce:

1 c. vinegar

5 Tbsp. Worcestershire sauce

2/3 c. salad oil

3 Tbsp. butter

1 lemon thinly sliced

2 cloves garlic minced

3 Tbsp. grated ginger

2 Tbsp. dry mustard


Directions

Rub meat with garlic salt and garlic pepper. In a covered grill arrange preheated coals around a drip pan. Place meat on grill over drip pan. Pierce meat in several places. Brush with basting sauce. Lower hood on grill. Grill for 2 hours, brushing meat every 30 minutes with sauce. After 2 hours cover top of meat with aluminum foil. Return to grill. Add 1/2 cup hickory chips (presoaked). Grill 1 1/2 hours. Basting Sauce: In saucepan heat basting ingredients until flavors are blended.
