Barley with Spinach Pesto

Very tasty and hold well in the fridge.

Ingredients

2 cups Baby spinach

1/2 cup Frozen Peas thawed

1/4 cup pine nuts or cashews toasted

1/4 cup Olive oil

1/4 cup Parmesan cheese grated

1 clove Garlic

1/4 teaspoon Kosher Salt

2 cups Farro or Pearl Barley cooked


Directions

Combine all ingredients except cooked grain in a food processor. Pulse until uniformly minced. Toss with cooked grains.
