Basic Vinaigrette

Ingredients

1 finely chopped

1 clove minced

1 teaspoon

1 tablespoon

3 tablespoons

3/4 cup


Directions

Combine shallot, garlic, mustard, lemon juice & vinegar in bowl or food processor. Whisk or process until well blended. Gradually add olive oil whisking or processing until blended. Add salt and pepper to taste. Change the flavor of vinaigrette; add 1 T. of fresh herbs; add pesto, olives or tomatoes; use as a marinade for pasta & rice salads; add 1-2 T. plain yogurt for a creamy version.
