Beef & bacon burger smeared in Oaxacan adobo (Oaxaca)

Ingredients

3 tbsp Mölli Oaxaca Cooking Paste

1 1/2 lb Ground beef 83%

1/2 White onion finely chopped

4 Bacon slices finely cut

1 tsp Salt

1 Red onion halved and sliced

6 Jalapenos, sliced in rounds

1 tsp Olive oil

8 Burger buns

1 Tomato, sliced

1 head Boston lettuce leaves separated, cleaned and dried

Condiments: ketchup mayo, mustard


Directions

• Preheat grill to medium-high. • In a bowl combine beef, white onion, salt and bacon; being careful not to over mix. Form 8 even thin patties, about ½-inch thick. Place in a covered container and smear the Oaxaca paste over them. Cover tightly and refrigerate for at least an hour. • Place red onion and jalapenos in a grilling basket. Spray onion and japaneos with olive oil. Place basket on grill and cook until onions are soft and slightly charred but not burned. Place on table as a garnish along with the lettuce, tomato and condiments. • Grill burgers over medium-high heat until desired doneness is reached, approximately 4 minutes each side if you want them medium. • Serve in buns with garnishes.
