Beer Brat Pasta

Ingredients

15 oz fresh bratwurst

1/2 cup beer

1 1/2 cups low-fat cheddar cheese

2 sweet red peppers coarsely chopped

1 cup onions coarsely chopped

4 cloves garlic chopped

1/2 cup fresh basil

1 Tbs olive oil

1 tablespoon Cinnamon

1 teaspoon Cayenne


Directions

DIRECTIONS: 1 Preheat oven to 425°F. Mix red pepper, onions, cayenne, cinnamon and garlic with 1 Tbsp. of olive oil in 9 x 13 baking dish and roast in oven for 25 minutes;stirring occasionally. 2 While vegetables roast, remove casing frombratwurst, crumble and brown in a skillet over medium heat until they are nolonger pink and well brown. Remove bratwurst and drain on paper towel. Pour fatfrom skillet. Add bratwurst and beer to skillet and simmer. Cook pasta accordingto package directions and drain, reserving 1/2 cup of pasta water. 3 Remove 1roasted vegetables from oven, immediately add bratwurst from skillet, add basil,pasta, 1 cup of cheese and toss to mix thoroughly. If mixture seems too dry, addsome of the pasta water to moisten. Sprinkle remaining cheese over top andserve. 1serving Recipe By: George Ross

I didn't use fresh bratwurst, but sliced up the fully cooked style and simmered in beer as directed. Not a lot of fat this way either. Didn't have cayenne substituted Chile pepper instead, used egg noodles, mixed as directed with 1/2 cup cheese, topped with remainder (1 cup) and baked another 5-7 minutes uncovered it was a huge hit!

Could be creamier.

My family loved this. It makes the kitchen smell heavenly & brought everyone to the table, eager to taste! I omit the cheddar & use Parmesan.
