BERRY CHEESECAKE

Cheesecake with berries on top of it and dusted with powdered sugar.

Ingredients

2 1/2 cups mixed berries

2 lemons

1 1/2 cups graham cracker crumbs

1 tbs powdered sugar

4 Eggs beaten

2 tsp vanilla

3 tbs cornstarch

16 oz cream cheese

1 1/2 cups sugar plus 1 tbs

1 tsp almond extract

2 cups half and half

15 oz ricotta cheese

6 tbs butter melted


Directions

Heat oven to 375 degrees. Spray 9" springform pan with baking spray. In bowl, combine crumbs, butter and 1 tbs sugar. Press onto bottom of pan. Bake 10 min. or until brown around edge. Cool. Reset oven temp to 325 degrees. From lemons, grate 1 tbs peel and squeeze 1/4 cup juice, set aside. Beat both cheeses until smooth. Add cornstarch, remaining sugar, and 1/4 tsp salt, beat until incorporated. BEAT half and half, extracts and lemon peel and juice. Add eggs, beat until blended. Pour batter onto crust. Bake 1 hour. Turn oven off. Let stand in oven 1 hour. Cool in pan 1 hour. Cover refrigerate 6 hours. TO SERVE---Top with berries, sprinkle powdered sugar over berries...
