Black Bean Lettuce Wraps

Ingredients

1 15 oz can no salt added black beans

1 ripe avocado

1 medium green bell pepper seeded and chopped

1/2 cup fresh cilantro chopped

1/3 cup mild salsa

2 TBSP fresh lime juice

1 clove garlic minced

1 tsp ground cumin

8 large romaine leaf lettuce


Directions

In a bowl, mash the beans and avocado together with a fork until well blended and only slightly chunky. Add all remaining ingredients (except lettuce) and mix well. Place approx 1/4 cup of the mixture in the center of each leaf lettuce and roll up like a burrito.
