Black Forest Cheesecake Parfaits

In the Black Forest region of Germany, the signature dessert is layered with chocolate, cherries, and whipped cream. Here, cream cheese replaces whipped cream. (Cooking Light magazine 8-04)

Ingredients

4 cups Cherries, frozen, unsweetened

1/2 cup Black cherry preserves

1/2 cup Sugar

2 tablespoons Lemon juice

6 ounces 1/3-less-fat-cream cheese

3/4 cup Chocolate wafer crumbs (about 15 cookies)

Lemon Rind grated


Directions

1. Combine cherries and preserves in a medium saucepan, and bring to a boil. Reduce heat to medium-low, and simmer 5 minutes. Remove from heat and cool completely. 2. Combine sugar, juice and cheese in a large bowl and beat with a mixer at medium speed until smooth (about 2 minutes). Cover and chill. 3. Spoon 2 teaspoons crumbs into each of 8 (8-oz) glasses; top each with 1 1/2 tablespoons cream cheese with mixture and 3 tablespoons cherry mixture. Repeat layers once, ending with cherry mixture. Garnish with rind, if desired. Serve immediately.
