Blueberry Poppy Seed Muffins KM

Ingredients

1/4 Cup poppy seeds

1 Cup nonfat milk

2 Cup white flour

1/2 Cup granulated sugar

3 tsp baking powder

1/2 tsp table salt

1/2 tsp ground nutmeg

1 ea lemon rind

1 ea egg slightly beaten

3 Tbsp margarine melted and cooled

2/3 Cup blueberries frozen


Directions

Soak poppy seeds in milk for 30 minutes. Combine flour, sugar, powder, salt, nutmeg and grated lemon rind. Add poppy seed mixture, egg and margarine, stirring just to moisten. Carefully stir in the blueberries. Spoon batter into 12 lightly greased muffin tins. Bake in 400F oven for 25 minutes.
