Bob's Beef Stuffed Peppers with Tomato Gravy

Ingredients

1 cup Finely chopped onions

1 medium Carrot grated

1 stalk Celery chopped fine

2 teaspoons Garlic minced

2 tablespoons Olive oil

1 pound Ground beef

1 cup Cooked white rice

1 large Egg

2 tablespoons Ketchup

1/4 cup Bread crumbs

1 tablespoon Beef broth powder Knorr

1/2 teaspoon Black pepper

4 large Bell peppers stem and top removed.Can also cut in half lengthwise.

4 ounces Cheddar cheese Shredded

Tomato Gravy

8 ounce Tomato sauce

1 can Tomatoes diced

1 teaspoon Italian seasoning

1 teaspoon Granulated sugar


Directions

Sautee onions, carrot,celery and garlic in olive oil for a few minutes. Set aside. In mixing bowl, combine ground beef, egg, rice, ketchup, bread crumbs, beef powder ,and pepper. Add 2/3 of onion mixture, Mix well. Place peppers upside down on plate. Microwave about 4 minutes. Cool to handle Fill peppers with meat mixture and place is baking dish. Add a little water to dish and cover with foil. Place in 350 degree oven and bake about 50 minutes. Remove foil and add a half cup of tomato gravy over peppers. Top with cheese. Put back in oven for about 10 minutes more or until cheese is melted and bubbly. Serve with additional gravy. Tomato Gravy, Add tomato sauce, tomatoes , seasonings and sugar to sautéed onion mixture. Simmer for about 30 minutes. Add water as necessary. Adjust seasoning.

Easy to make and everyone just loves this tomato gravy. It says a can of tomatoes and what size would that be? 8 oz like tomato sauce or more?

This recipe is TOO DIE FOR! I am allergic to eggs and dairy, therefore, I omitted the egg and used the Daya brand cheddar. I added chili powder and paprika to the sautéed vegetables and thinned my gravy with chicken broth! So so so good.
