Ingredients

2 slices bacon

1/2 pound fresh spinach

2 Eggs

2 teaspoons Parmesan shaved


Directions

1. render bacon until almost crisp. Chop. 2. Add spinach, handful at a time, and braise about 5 minutes. 3. form 2 nests in spinach and crack an egg in each. 4. Cover and cook until whites are set, about 4 minutes. 5. Garnish with chopped bacon and shaved parmesan.
