Ingredients

2 small wraps whole grain

2 tablespoons Tomato paste

50 grams Baby spinach

50 grams Mozzarella grated

6 Cherry tomatoes quatered

30 grams Prosciutto thinly sliced

2 Eggs

1 teaspoon Italian dried herbs

1/2 teaspoon Dried chiles optional


Directions

Preheat oven to 230C. Spread wraps with tomato paste, scatter over spinach leaves, sprinkle with cheese, add tomatoes, prosciutto, crack egg into the center of each and sprinkle with herbs and chilli. Bake for 10 minutes or until cooked. For lunch or dinner, serve with a salad. Note: For a gluten-free version, use corn tortillas
