Ingredients

1/2 Cup

Scant 1 Cup

1 Cut into 3/4 inch pieces

1 teaspoon

1/2 teaspoon Finely chopped

1/2 cup


Directions

Cook brown rice until water is absorbed. Let stand while cooking zucchini. Melt butter in sauté pan over med high heat. Add ginger and zucchini. Sauté until very lightly browned. Add salt and pepper. Toss with cooked brown rice. Add cashews if desired and toss again.

I used a rice cooker to make this but added the zucchini too soon which made it a little mushy. Still tastes ok. Will try it again and not add zucchini til rice is almost done
