About 1/ 1/2 pounds fish filet--black cod salmon, or other rich fish

1/4 tsp turmeric

1/2 cup minced shallots

1 tbsp minced garlic

1 tbsp minced ginger

2 tbsps peanut oil

1 tbsp red chile oil or to taste (recipe below)

1 tsp shrimp paste or substitute 2 tsps fish sauce

1 tsp red chile powder

1 cup packed dried red chiles soaked in lukewarm for 20 minutes

1 cup peanut oil
