Ingredients

1 package yellow cake mix 18.25 oz.

2 cups quick-cooking oats; uncooked

1 cup sugar

1 cup vegetable oil

2 Eggs

1 cup pecans chopped

1.5 tsp vanilla extract

Directions

Preheat oven to 350. Combine cake mix, oats and sugar in a large bowl. Mix oil and eggs; add to dry ingredients and mix. Drop by rounded spoonful 2 inches apart onto ungreased cookie sheet. Cook for 10 minutes and remove rack to cool.

I added a little bit of cinnamon and I used raisins instead of pecans in one batch, and walnuts in the other. They were very easy to make and tasted so good! I love that they use cake mix because it keeps them thick and chewy the way all cookies should be.
