Caldillo (New Mexican Green Chili Stew

Ingredients

1/2 c Onion sliced

2 tb Vegetable oil

6 Green chilies

3 md potatoes diced

1 lg clove garlic minced

2 ts Salt

2 lb Lean beef round or pork


Directions

Cube meat, sprinkle with salt and fry until brown in oil. Add potatoes to browned meat together with onion, garlic, salt, chili and enough water to cover. Continue to add water if necessary. I made this with Pasilla chiles - it was very good. I also mashed up some potatoes and added to give soup more thickness.

Fresh Hatch green chili is best for this recipe. Canned is ok. You can find Jatch green chili in the can at Costco. Enjoy!
