Caramelized Black Pepper Chicken and Sausage with Green Beans

This Vietnamese dish uses sweet brown sugar to temper salty fish sauce. Consistent heat throughout with no flair-ups.

Ingredients

1/2 cup dark brown sugar

1/4 cup Fish sauce

1/4 cup Water

3 tablespoons Rice vinegar

1 teaspoon Garlic minced

1 teaspoon Ginger grated

1 teaspoon Coarsely ground pepper

1 small Serrano chili minced

1 tablespoon Canola oil

1 medium shallot thinly sliced

2 large Boneless skinless chicken breast cut into 1 inch cubes

4 cilantro sprigs

2 medium Sausages thai flavored if possible

1 medium Red bell pepper julienned

1/2 pound Green Beans cut into 1 inch pieces, blanched


Directions

In a small bowl, combine the sugar, fish sauce, water, rice vinegar, garlic, ginger, pepper and chiles. 2. Heat the oil in a large deep skillet. Add the sausage and cook over moderate heat until browned on both sides. Add the shallot and cook until softened. Add the fish sauce mixture and the chicken and simmer over high heat for 5 minutes. Add the beans and peppers and cook for 5 more minutes, until the chicken is cooked through. Transfer to a serving bowl, garnish with the cilantro and sesame seeds.
