1 medium butternut squash (about 2.5 lb) peeled, seeded and cubed
3 Tbsp coconut oil melted
2 Tbsp coconut pam sugar
3/4 tsp fine sea salt
1/4 tsp ground black pepper
fresh parsley for serving
Easy and very tasty. I bought pre-sliced squash since butternut squash can be really difficult to cut.
