Carey's Beer Batter For Fish, Shrimp & Onion Rings

This recipe makes the best fry batter for almost any fish, chicken veggies, onion rings etc.. tastes great and holds well, some people prefer top to toss the onion rings in a littler flour prior to coating

Ingredients

2/3 cup All-purpose flour

1 teaspoon Seasoning salt

1/2 teaspoon Baking Powder

1/2 cup beer

1 Egg

1 tablespoon vegetable oil or melted butter ( preferred )

1/2 teaspoon Old bay Spice ( or other creole type seaoning )

1/4 teaspoon Granulated garlic

1/4 teaspoon Onion powder


Directions

1 Mix flour, salt, baking powder, old bay, garlic, and onion powder ( all dry Ingredients) in a bowl using a fork. 2 Beat beer, egg and oil together in a separate bowl. 3 Stir into flour mixture until well blended. 4 Batter should be pretty smooth and moderately thick. 5 Dip fish, shrimp, or onion slices in coating and deep-fry in hot oil that has been heated to 350 degrees, until it becomes golden. 6 Drain, and serve while hot and crispy. 7 This recipe also works well with chicken tenders and vegetable pieces; whatever you like to coat with beer batter. ** If you are doing onion rings, try soaking the sliced onion rings in either cold water for several hours or even buttermilk, prior to coating and frying.**

I had to add just a bitm ore flour to make it thicker, but other wise it was delish!

Try sparkling water instead of beer works very well

very true to from! it was awesome! I added some cayenne pepper and also tossed shrimp in half a cup of corn starch prior to dipping in batter to help it hold better! i am stuffed!
