1 large red onion peeled and chopped

1 large leek trimmed and sliced

2 pints vegetable stock homemade or yeast-free stock cube

1 small potato peeled and chopped

2 tomatoes, peeled cored and chopped

2 tbsp tomato purée citric acid-free only

1 tbsp parsley freshly chopped

400 g can butter beans rinsed and drained

1 pinch sea salt

1 pinch black pepper
