1/3 cup sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 cups whole buttermilk

1 cup grated carrot (3 to 4 medium carrots)

2 large eggs

3 tablespoons unsalted butter melted and slightly cooled

1 teaspoon vanilla extract

1 tablespoon vegetable oil

Whipped Cream Cheese (recipe follows) and maple sy to serve

Garnish: toasted chopped pecans
