Cauliflower and Potato Catalan

Ingredients

1 lb yukon gold scrubbed and cut into chunks

1 large cauliflower trimmed and cut

1/4 cup olive oil

1 teaspoon salt

Freshly ground pepper

1 cup chicken broth

2 tablespoon flat-leaf parsley, dill or basil fresh chopped


Directions

Place potatoes and cauliflower in large slow cooker, add oil, salt, and pper to taste and toss well. Add roth, cook low 3-4 hr hr Sprinkle with herbs and taste for seasoning. Serve hot or at room temperature
