Chicken and Apple Spinach Salad

This recipe is a great way to use up some leftover grilled chicken breast. The Granny Smith apple offers a refreshing crunch.

Ingredients

1 Granny Smith Apple cored and chopped

1 cup boneless chicken breast cooked, torn into bite-sized pieces

1/2 cup walnuts crushed

2 cups yogurt

1 tablespoon agave nectar

2 cups baby spinach


Directions

1. In a large mixing bowl, combine the apples, chicken, and walnuts with the yogurt and agave. 2. After blending well, add the spinach to the bowl and toss to coat. 3. Divide the salad evenly between two salad bowls and serve.
