Chicken and hominy chili bowl

Ingredients

1 bag Corn tortilla chips lime flavored

1 bag Baby carrots

6 large skinless chicken thighs bone-in 6oz each

1 tsp salt

1 tsp Black pepper

1/2 tsp Dried oregano

3 cloves garlic chopped

1 Green jalapeno pepper seeded & chopped

1 Onion chopped

1 Bell pepper chopped

2 cups Chicken broth reduced sodium

1 can Hominy drained & rinsed

2 Tbsp Cornmeal

1 carton Light sour cream

1/2 cup cilantro

1 tsp Ground cumin


Directions

* Spray slow cooker bowl with nonstick cooking spray. Place chicken in bottom of slow cooker and season with 1/2 tsp each salt, cumin; 1/4 tsp each black pepper and oregano. * Scatter onion, garlic, jalapeno and bell pepper over chicken. Pour broth over top. Cover and cook on LOW for 10 hours. * Stir in hominy, cornmeal and remaining 1/2 tsp each salt and cumin; 1/4 tsp black pepper and oregano. Cook on HIGH for 15 minutes. * To serve, stir in cilantro. If desired, accompany with tortilla chips, sour cream and additional chopped cilantro.
