Ingredients

4 Chicken breast Preferably with the skins on

2 tablespoon Olive Oil

2 Onions Thickly Sliced

250 grams Chestnut Mushrooms Sliced or quartered

1 tablespoon Tomatoe Puree

400 ml Chicken Stock

300 ml White Wine

4 Tomatoes Quatered and de-seeded

Tarragon Season to taste

Parsely Season to taste


Directions

Season the chicken with salt and pepper and fry until golden brown. Then set aside. Cook the onions and mushrooms until soft. Stir in the purée and white wine and reduce a little Pour in the stock and chicken and simmer Cook for one hour covered Add the tomatoes and simmer for 2-3 minutes and add the herbs to taste.
