Chicken Paprikash

Ingredients

1 Tbls Olive oil

2 1/2 lbs chicken bone-in, skin-on

3/4 Kosher salt divided

3/4 tsp. black pepper divided

1 medium onion sliced

1 bell pepper sliced

2 cloves garlic chopped

1 28-0z can tomatoes peeled, whole

1 Tbls paprika

6 oz wide egg noodles

1/3 cup sour cream

2 Tbls dill chopped, fresh


Directions

Heat the oil in a large port over medium-high heat. Season the chicken with 1/4 tsp. each salt and pepper. Cook until browned, 4-5 minutes per side; remove from pan. Discard all but 2 Tbls of the drippings from the pot. Add the onion, bell pepper and garlic and cook, stirring until tender, 4-5 minutes. Add the tomatoes, crushing them with your fingers as you add them. Add paprika, 1/2 tsp salt and 1/4 tsp black pepper and bring to a boil. Nestle the chicken in the mixture and simmer, partially covered, until cooked through, 15-20 minutes. Meanwhile, cook the noodles according to the package directions. Top with the chickn, sour cream and dill.
