Ingredients

1 pound Chicken meat cooked; small dice

1/2 ea Red onion peeled; minced

1 ea Red bell pepper minced

1 ea Green bell pepper minced

1 cup Hot pepper sauce

1 teaspoon Salt

1/2 teaspoon White pepper

12 ounces Cheddar cheese shredded

4 10-inch Flour Tortillas

Pan spray


Directions

Combine cooked chicken with onion, peppers, hot sauce, salt and pepper. Mix well. Heat a large saute pan or use an electric griddle. Divide the chicken mixture and cheese between the 4 tortillas and fold in half. Spray the pan or griddle with pan spray. Place quesadilla on pan or griddle and cook 3-4 minutes until light brown. Flip quesadilla over and continue cooking on the opposite side an additional 3-4 minutes until tortilla is light brown and ingredients are heated throughout. Remove from pan and hold in a warm oven until all quesadillas are cooked. Remove from oven and cut each quesadilla into 4 triangles. Serve with sour cream and salsa.

Terrific Recipe!!! I made a couple of modifications to suit my spice-sensitive spouse.... I substituted Green Spring Onions for the Red Onions because they are not as strong and I mixed the hot sauce with the white pepper and salt and brushed it on the inside of each tortilla before cooking. Again this soften the kick. Now here's a time saving twist.... I was making a double size recipe for a large group so I substituted fully cooked roaster chickens from my local deli. Skinned, de-boned. of course, and diced. It was a crowd and more importantly... a spouse pleaser.
